Red Beans & Cathead Biscuits

Tonight for dinner we had those red beans I cooked yesterday using my new pressure cooker. Well let me say these beans were absolutely delicious! Rich, creamy and seasoned perfectly with the right amount of smokiness from the sausage and andouille.
I was going to pick up a loaf of french bread but decided to make big ol' homemade cathead biscuits. I know it gets old hearing someone say that something they made was really good but heck I can't lie to you. The biscuits came out perfect from top to bottom!
I have a big hand and these kitties were almost as big. This pan is an 18"x13" pan.
Didn't need to add hot sauce or anything!

I don't think you can go wrong with a good French bread, biscuits, or cornbread.

We just had cornbread four nights ago. Can't go wrong with biscuits and if there are leftovers you can always eat them with coffee the next day.

We'll have to try biscuits with beans sometime then.

I love those type of biscuits. Never knew they had a name. I always called them scones

A cathead and a scone are both baked and that's as close as they come.

Scones have eggs and sugar...cathead biscuits are a different breed.

Red beans and rice..good
Biscuits....good
Can't be anything but great. I am a cornbread kind of guy as well, but they look great. May have to put some Steens on the biscuit
