My company is having a crawfish boil on Thursday...

and they sent out an email to solicit people to bring in some desserts. I feel like making something to show my co-workers my skills in the kitchen. What is a good dessert make for a crawfish boil? I am leaning towards some type of cake.

Dirt pie. It's basically vanilla pudding mixed with Cool Whip, cream cheese, and butter with a little extra sugar all mixed together, then topped with ground up Oreos.

Will you have access to a freezer or fridge until dessert is served? Something cold or cool is really the best after a spicy meal, to me.
Might not be practical for you depending on the setting.

I bring these to the office and they go minutes after I put them down.
Chocolate Toffee Bars
1/2 cup butter or margarine, melted
1 3/4 cup crushed chocolate teddy grahams
1 1/4 cup almond brickle chips (found near the choc. chips)
6 English toffee candy bars (like Heath), crushed
1 cup semisweet chocolate chips
1 cup chopped pecans
1/2 chipped walnuts
1 14 oz. can sweetened condensed milk
Line a 13 x 9 baking pan with aluminum foil allowing the foil to extend over the ends of the pan. Spray with Pam or use the Reynolds non stick foil. Pour melted butter into pan. Sprinkle crushed choc. teddy grahams in bottom of the pan, press firmly and bake at 325 for 5 minutes.
Layer almond brickle chips and next 4 ingredients over crust in pan. Press layers down firmly. Pour condensed milk evenly over top. Bake at 325 for 30 minutes or until edges are lightly browned. Cool completely in pan. Lift foil out of pan. Cut cookie into bars. Makes about 2 dozen depending on the size you wish them to be. Very rich.

Nah, I doubt I would have access to a fridge until it's served. Whatever is made it would have to sit out on the table. I think there will be between 30-40 people there, but the desert doen't have to be made for that many b/c of the wide selection of other deserts that will be there as well.

Use coconut oil. Put the oil in a small pot. Dump in ground up herb. Let simmer on low for a few hours. Strain the herb, and use the oil in your favorite cookie mix.

Af far as what would pair well - I'd make lemon bars or something else citrusey & refreshing to take some of the heat off.

A simple chocolate pudding with sweetened strawberries mixed in to it, and a side offering of whipped cream(the real stuff).

Also, thanks for reminding me that I need to make some herb butter. Got some trimmings of Blue Dream and of Jack Herer that I've had for a while.
