Game of Thrones since it is the only one on your list that is still running that I'm am aware of, thus you can catch up on a very good active series. Enjoy.
Out of the inactive series my order would be: Rome, Deadwood, Six Feet Under, The Sopranos and The Wire. I haven't seen the others.

The Wire is the greatest TV show of all time. Go with that.

This, plus S2 starts in less than a month, so it should be the priority.
The Wire is the best and should be the second one you start, but literally ever show you listed is amazing except for Treme, which mostly sucked. Haven't seen Luck, Mildred Place, or Oz.

Game of Thrones then you will be pumped for the new season.
Rome season 1 is epic but season 2 was chopped and forced when they combined two seasons into 1. Plus I didn't like the way they went with it.
I grew up on westerns so I love me some Deadwood probably more than just about any HBO series. People claim season 3 sucked but those people are cocksuckers and hoopleheads. It wasn't as good as 1 and 2 but it was still pretty good except when they wasted time on the acting troupe.
Heck, given the limited amount of series you have seen, you have some SERIOUS awesome viewing ahead. I envy you.

Currently watching the Wire, about to kill season 3 on the way to Gulf Shores tomorrow

I knocked the entire series of The Wire out in 2 weeks, that's how good it is. Of course it was over Christmas break so that made it easier.

After that, my next favorite is Deadwood.
Game of Thrones is incredible and you can get caught up on the first season in time to start the second season in April.
Boardwalk Empire is also a great one you could get caught up on relatively quickly.
Sopranos is pretty good too.

If it were just you, I'd say The Wire or Sopranos. Since it's you and your girlfriend, go with Six Feet Under first.

Watch The Wire last. It ruins television and you will spend the rest of your life comparing everything you watch to the wire. Nothing compares or is even close.

Rome or Deadwood. I like treme too. Game of Thrones is real good.
