Immersion Blenders...Who has 'em?

Just ordered a 7 inch model on a whim. What can I do with it?

Make your own mayo. You can get real creative with it.
Also, make frozen cocktails for the ladies.

I have one, and it came with a bunch of other applications in the form of other tools. The first one I used was a commercial model that was three feet long(it was called a bang stick), and would tear through stuff in a second

Like potato soup? Maybe blend some of the potatoes and keep some potato pieces for texture.
I'd imagine you could get a smooth tomato soup with a blender as well.
Also, you could immerse it in red beans for just a second or two to get some of them creamy.

I used to like to use them to mix chocolate milk...gives it a frothy feel
They're good for soups as others have mentioned. If it comes with an attachment you can use it for some light food processing like grinding nuts and such.
I really like the Oster one I have now. The blade part attaches from the motor part and you can throw it in the dishwasher. Makes for more portable storage as well.

Alot. Pureed soups and sauces. When stewing beef I put carrots and various other root veggies then puree them to make the gravy. Usually don't have to use a thickener.

I have also used it with butternut squash soup. Great with red beans and rice.

Mine is longer, but I make soups in large quantities, so I need one longer than 7 inches. (I had to delete "to go deeper" at the end of that sentence for obvious reasons.)
Neauxla had one on here a few weeks ago, I believe. I think it was Neauxla. It came in a handy case with quite a few attachments.
I use it mainly for soups and sauces. I use it a lot. It's a great gadget.

If you order a black model they do. I know it seems odd that a simple color change would matter but it does. Not sure why white ones are smaller.
