So I made my first Jambalaya this weekend

I used a recipe I found in the search from Kajungee in 2008 so many thanks to his wisdom on the matter.

I couldn't get the rice to cook just how I wanted. I think I may have put a little bit too much in one pot. The flavors were definitely there. I just snacked on a couple of the crusty bottom bits and it was awesome.

I cooked it in a 5 quart pot and over half of it was eaten even though there were only 5 of us.



Rice came out a little mushy (I swear I didn't stir it!)

Looks good. I like my rice a little more brown in color and my sausage cut into smaller pieces.

Yeah I usually cut the sausage in half but I had some hungry people so I was rushing.

I can't remember if it was kajungee or treedawg, but I think one of them makes an AWESOME pastalaya.

That's one recipe I'd love to see on here.

It's bad arse...

So far we've made a Gumbo, Vegetable Tortilla Soup, a Texas Chili, and now the Jambalaya on it.

Oh and one day I made a chicken curry in it.

While I'm posting pictures...

27 different peppers and some onions diced for the base of the Texas Chili


Pork and beef


Browning the meat in bacon grease. We deglazed with shiner bock after each batch.



Then throw the veggies in the pot


Then throw in some seasonings after it gets pretty brown


Forgot to take pictures of the final product but it was really good. I didn't make that.

I did make some ceviche though!

The Oak Grove Smokehouse mix is pretty good. But the way I've had it is (fricking shoot me for saying this) semi-homemade...i.e. chop up some peppers and onions and brown and add to the mix.

Your Jambalays looks nasty!

I made my first one this past week (in an aluminum pot b/c I don't have a cast iron one) and it came out a hella lot better than that crap in your photo.

I made somebody's pastalaya once and it came out well. I think it was a link to a website though.

Just by looking it appears to have had either too much water to rice ratio or you didn't boil the rice hard enough to pop it. Look at the grains of rice in the pic below. This is the easiest way to tell if the rice is cooked. It will kind of split open or "pop" as we call it here.

It happens sometimes. I'd much rather have that problem than have the rice come out too dry.
