Got a few duck breasts that I am going to cook tomorrow. I've never actually prepared them myself. Any advice?

I cut up the breasts in pieces, roll them in a strip of bacon with pepper jack cheese and a jalapeño and grill them over a hot flame till the bacon is crispy. Hold everything together with a toothpick. Good stuff!

Same as above but use cream cheese instead of pepper jack.

Same as above, but I've started doing it in the oven in a tray because the grease from the bacon will catch fire or not cook evenly. 350 for about 15 to 20 minutes does it just right.

Cook down onions and bell peppers until they turn dark brown. Add some orange juice to make a stock/gravy. In a seperate pan brown the duck in olive oil. Add duck to stock and bake in the oven until tender. Serve over rice.

You can just about add anything you like instead of orange juice. Beer, chicken broth, beef broth, red wine,......ect.

Just something different that I started doing after growing tired of the same old wrapped in bacon trick. Although the cream cheese jalapeno wraps are still A+ in my book!

Pan fry them with some butter slowly, salt and pepper, don't cook them all the way through. Maybe use a little orange juice. I did the cream cheese/jalapeno thing for years but you could wrap my old Doc Martins with that shite and it'd be good. Respect the duck

Remove skin. Season with EEOV, sea salt, cracked pepper, cook real hot 2 minutes each side like a tuna steak, rare.

I season them then brown the shyt out of 'em in a little grease then add water, seasoning, etc. and cook at 350ish for a couple of hours. Pour gravy over rice.

You can pull the leg out of the meat.

If not enough for a gumbo then i suggest stuffing them with a piece of sausage and putting them wrapped in foil on the pit. I double the bottom and make a little gravy for them to steam in while on the pit.

I do the wrap with jalepeno and cheese wrapped in bacon on the grill. Lately I take that wrap and double batter it in egg wash with Louisiana hot sauce then flour, and deep frying. The double batter traps the cheese inside. The only way to make something wrapped in bacon? deep fry it.

Thanks for the advice everyone. I wrapped them in bacon, pepperjack cheese, and jalepenos and grilled them till the bacon was crispy. They were absolutely delicious.

I like to soak them in milk for a day then batter and deep fry The cream chees, jalepeno and bacon method is good as well.

I've only ever had duck that was fried, wrapped, or in a stew but I was watching this the other night and definitely want to give it a shot

Don't knock it til you've tried it. It tastes far better than any creamcheese/jalopeno concoction i can come up with.

Looked like shyt to me, course mallards ARE.

As for the good-eating ducks I like to brown the shyt out of 'em like a yard chicken, then make a gravy; put in oven and leave at 350 for a few hours.
