Most original poboy in BR?

I'm tired of the mayo lettuce tom pickle. I do like places that let you create your own (mine is a oyster/shrimp poboy w/ bacon swiss lettuce avacado tom tigersauce with a side of roast beef gravy) For example, Jasmine's on Coursey does a "rocket" poboy with traditional fixings but instead of mayo, they add a spicy remoulade/ayoli type of sauce. OK, its not too off the wall which is why I'm asking

So a bbq shrimp poboy, adding horseradish to roast beef or butter garlic to an oyster is just too out-of-the-box for your palate?

I like the calamari poboy at Chelsea's. Fried calamari with parmesan and tomato basil on the side.

My favorite is a jambalaya poboy with a side of Cajun gravy to dip in. But I make that myself.

Why not try a torta at one of the taquerias?
Mexican sandwich served with fillings like seasoned beef brisket, beans, cheese, lettuce, tomato, avocado. Tacos & Burritos Express and La Tiendita both make good ones with brisket, grilled steak, chicken, etc.

Taquerias here in Athens have some great ones -- I like the ones with marinated pork (al pastor), plus jalapenos. Great sandwich.

Grilled shrimp poboy at Sammy's is the deal. I usually like fried shrimp poboys, but this one is so good it's almost like a philly cheesesteak but better, spicier. Worth a shot if you're up for trying something new.

I ended up going to Tacos & Burritos Express this morning to get one, plus a pork gordita. Normally, everything there is on the money. But they were serving up that brisket mixed with the mysterious cow parts I couldn't identify, and a bit too much fatty meat.
I'll eat at TBE for burritos, but leave it to La Tiendita for the tortas.

Make a grilled shrimp poboy at the house. Grilled shrimp w bellpeppers and onions. Top with pepperjack cheese and mayo on toasted french bread.
This is pretty much my fav poboy.
