What else should I throw in the smoker?

I have a couple boston butts, a pork loin, and 2 chickens.
Also, I don't like brisket so that's out.
Anyone ever smoked rabbits?

If you have any Tuna scraps throw that in there.
Then make a tuna salad with it.

Haven't tried this, but it should be pretty good. I'd probably lay some bacon or pork fat over them and foil them after an hour or so to keep them from drying out. Maybe add some chopped rosemary to the rub for the bunny.
Let me know how it comes out if you try it.

Rabbits are best cooked down in a gravy imho. I would think a smoked bunny would dry and tough, but who knows. A deer ham on a smoker with bacon piled on it is gooder than hell.

You smoke the damn rabbit and then smother the SOB to reintroduce moisture and tenderize. Great for a sauce,gumbo,jam or beans.

If you foil it and put some pork fat in there, I don't think that would happen. It would almost be like a confit without the "curing" process.

Excuse me Sir Otis for never having smoked a rabbit. I usually par-boil the damn thing, brown his cotton pickin arse in a cast iron pot, and then smother the SOB in a gravy with a bunch of damn onions and stuff.

Put some mushrooms on for a bit and then use them in a pasta dish. We were talking about the smoked mushroom app at Emeril's the other day. It's awesome. Smoke a little tasso, as well, and use it with the mushrooms.

Any particular reason you don't like brisket? When done correctly they are my favorite out of the smoker.

It's not that I don't like them, I've just tried to do it before and I suck at it.
