ok, is Alligator Gar good eatin'? Got a fishing hole full of um'. I've been told by some folks that it's not good but also told that you can make Fried Gar Balls which are decent.

I think it is possible to make gar edible. But I've also heard of people eating their own feces to prevent starvation. And if it came down to it, I would probably eat gar before my own excrement.

Gar balls are the only thing to do with one of those monsters. Find somebody that REALLY has some experience with these before you go hacking into one.

There are some brothas that will eat them...
I am sure if you ground it with seasoning and breadcrumbs then deep fried it that would be decent enough. Hope you have a chainsaw ready to clean the damn thing.

i actually like garfish balls, browned, then cooked down in a seasoned brown gravy, and served over rice.

Yeah, Gar balls are about what I know to make.
BTW... Got this in an e-mail. These guys caught this at Sam Rayburn Lake in Texas. 8'2", 244.5 lbs, and 44.75" girth
Don't know when they caught this, or how old this e-mail is, but I bet you could get some serious gar balls out of that baby.

About 20 years ago we were shrimping behind G.I. and caught about a 40-50 pound alligator gar. We had to kill it to get it out of the net. Then we said what do we do with it now. Long story short, we get back to the dock and there was a brotha at the dock and he couldn't wait to take it off our hands. He said ohh, we gonna have a party in White Castle tonite.

Them bastards will frick you up if you aren't careful and they get loose in the boat. My wife's cousin has a land popierre and we caught a small one about 4' long that bastard went crazy when it hit the picking box.

the smaller ones can be cut into half inch steaks and fried and are very good they are just no fun to clean the bigger ones make gar balls

Nastiest smelling fish out there to me. Watched lots of commercial fisherman clean these with machetes. Those fisherman were the worst smelling people I have ever come across.
Garfish is more of a central to northern Louisiana fish. Most people on the coast don't eat them. Too many other choices to have to settle on gar.

The boat launch in delacroix has a shitload of gar that stay right by the dock. I think they feed on all the dead shrimp and stuff that they throw out at the bait shop.

Ingredients: Deboned gar meat free of gelatinous tissue.
boiled potatoes. ( pound for pound of gar meat )
green onion tops, finely chopped. 1/2 cup/
1lb. corn flour, not corn meal or white flour
Crawfish boil. Premixed type such as Zatarans.
Add no other seasoning as the crawfish boil will supply the seasoning.
Use the real spicy suggestions in the instructions.
Directions: wrap gar meat in cheese cloth and boil exactly as you would crabs or crawfish. This renders the gar meat snow white and taste like lump white crab meat. Combine the gar meat,shallots, and potatoes. Mash this mixture until you are able to form patties. Dip firm patties in egg/milk mixture then dredge in corn flour. Deep fry at 350 for approx. 8-10 minutes. Serve with cold beer !

the only difference in how i have had them is that instead of eggwash and deep frying is they dusted in flour, browned in a pan in some oil, and then toss in a good brown gravy heavy in onions to simmer. then serve over steamed rice with some green onions on top.

I always get them when throwing the net for shrimp. Slimy and stinky. Some people eat them, but I've never tried them.
