Needs to be pretty easy. Prefer cheesy, creamy, possibly with seafood.

+1
Or Crawfish Dip
1lb crawfish tails
12 oz cream cheese
1/2 stick butter
1/2 tsp garlic powder
1/2 tsp red pepper
1/4 tsp salt
1/4 tsp pepper
Melt butter and cream cheese. Stir well. Add spices. Drain crawfish (if store bought) and add to mixture. Serve warm with Wheat Thins or Club Crackers.
Of course, if you're using crawfish from a previous boil, you'll need to adjust the spices.

Check the TD recipe book above. There's a spread/dip called crabmeat layered dip. You can use crab, shrimp or both or crawfish are all. It's good and it goes a long way.

NIKINIK's FAMOUS CRAWFISH DIP
INGREDIENTS
12 ounces frozen peeled crawfish tails, thawed
1/2 cup butter (1 stick)
2 cloves garlic, chopped (please use fresh)
1 tablespoon Zatarain's crab boil
1 tablespoon Old Bay Seasoning™
1 teaspoon Accent or MSG
12 oz Philly cream cheese
Chicken N a Biscuit snack crackers
DIRECTIONS
Place the 1/2 of the crawfish tails into a food processor and pulse until roughly chopped.
For the other 1/2 chop them by hand so that the pieces are a little bigger.
Set aside.
Melt the butter and garlic in a pan over medium heat.
Add the crawfish tails, crab boil, Old Bay seasoning and Accent.
Cook and stir until butter is completely absorbed.
Remove from the heat and stir in the cream cheese until it has melted.
The dip is best when made the day before so it has time to really absorb the flavors.
Serve the dip warm or refrigerate and serve chilled. MUST be served with Chicken N a Biscuit snack crackers.

SPINACH AND ARTICHOKE DIP
½ onion chopped
1 stick of butter
2 boxes chopped spinach, cooked and drained (20 oz)
8 oz. Cream cheese, room temperature
1 cup sour cream
½ cup parmesan cheese, grated
1 can artichoke hearts, drained and mashed
8 oz. Monterey jack cheese, shredded (I prefer pepper jack)
Crushed red pepper, salt and pepper to taste
Melt butter. Add onion and saute, until clear, about five minutes. Remove from fire. Add remaining ingredients. Blend well. Microwave for five minutes. Put in crockpot to keep warm. Serve with tortilla chips, salsa, and sour cream.

Prefer cheesy
This proves my wife's point. She said "when we go to a party everything has cheese in it."
I never thought about it until I met her. But she's right. I've been to several dinner parties where EVERYTHING had cheese in it:
Green bean casserole with cheese
Salad with grated cheese
French Bread with parm cheese
Dips with cheese
Cheese with little tooth picks
Potatoes Au Gratin
At one party she was restricted to eating a slice of ham. Everything else had cheese.

Cheese, rotel and ground meet. Can't beat it .

This is because cheese is good.

8 oz cream cheese and 1 can of chili with beans heated together on the stove (heat the chili first) and then served with fritos

If you can't have cheese in the house, how does she stand being around it at parties?
She's right, though, live centers around cheese. Mine does, at least.

That's her point. She makes excuses for not being there "tell them my Mom died."

Damn, I would just eat before I went. Booze it up and enjoy the party.
