When is it acceptable to make your first gumbo?

It's cooled off quite a bit up here, and I've still got a pound of wild hog sausage in the freezer. 'Bout ready to pull the trigger.

i don't usually start until mid october. but i made one in july. i always get that mid summer craving for it. i can't wait until cool gumbo weather!

I crave it, make it and eat it all year round. I have AC, so the outdoor temps don't matter to me. I'm trying to eat the freezer supply of chicken and andouille to refresh that soon. I've got one more container of shrimp gumbo, sans the shrimp, so I need to make a good stock and make that again as well. I just add fresh shrimp when I heat up the base of the gumbo. Had gumbo for lunch today.
