Any cast iron black pot cookers here?

Just got my first seasoned 12QT (been used for years) cast iron dutch oven pot and want to cook something on it.
Beef, sausage, onions, pot makes the gravy itself.
Any ideas for good cast iron recipes?
I like cast iron because it lends a awesome flavor to food that steel cannot produce.

I don't really use anything but cast iron. Make yourself a good jambalaya to celebrate the black seasoned goodness.

A good jambalaya always does. I really appreciate those who take the time to do it right.

Makes the best baked beans or dirty rice for your next barbecue, too.

Makes a good dog food dish. The weight keeps it from turning over.
Wait, did I type that.
I meant, let the dog lick the gravy residue. He/she will lie at your feet, fetch you paper, and answer the phone.

well, since you asked..........
Tree's Country Pot Roast
1) Make some holes in the Roast with a Knife and plug it with toes of Garlic cut long ways.
2) Season roast generously as you like.
3) Dust with Flour.
4) Cover the bottom of a Black Iron Dutch Oven with oil, heat, then sear the Roast on all sides.
5) Cut two stalks of Celery, one Onion, a couple chunked Potatos and add a bag of baby Carrots. Put all in Dutch Oven with Roast.
6) Add one can of Beef Consomme (Can Beef Broth or French Onion Soup can be substituted).
7) Place in Oven at 350, covered, for 1/2 hour per pound.
8) Baste every 30 minutes, adding water as needed.
9) When done, remove Roast and Veggies, then the liquid can be thickened with a Corn Starch/Hot Water mixture or added to a Roux to make a Gravy.
I like a Chuck Roast for this dish. Its all about the Fat!!!!!!!

+1; i pretty much cook everything in cast iron, except things with high acidity (tomato based items) and things that would stick real bad (eggs, etc.).
well, at least i did (past tense) use cast iron all the time. ever since moving into a house with one of those flat glass/ceramic stovetops, i've been using it less...afraid of destroying the cooking surface (scratching it up). until i get the stove changed out, i won't be using cast iron as often....

i hope to change out the stove before it comes to this but definitely a viable option
need to price out how much it will cost to run the gas lines in the kitchen (for a gas stove, not the fish cooker....
