Crawfish boil success

hey everyone. i had my birthday crawfish boil this past friday night. i wasn't expecting as big a turnout as we had but nonetheless 35lbs of crawfish was gone at the end of the night. i would say we did pretty good as we only had i think 4 or 5 that were dead. we also had burgers, hot dogs, and plenty of beer. everyone had fun and made it home safely. i suppose i'll throw in a picture of the chef which was me. i was getting the water ready to boil. i told someone to take pictures of the crawfish and stuff, but they got a little pre occupied with beer and socializing.

We ended up having over 30 people. Thank goodness I got enough burgers and dogs because the first pot of crawfish were gone before I could get the second pot done. I weeded out the sissies on the second pot though. I added more spices to them and let them soak longer and boy were they good and spicy. I only had a couple people eating on that pot because the others couldn't handle the spice. I really wish though that I had more pictures.

cant get worse than my boil yesterday
I was asked to boil crawfish for a benefit - they had "everything you need" all I had to do was show up and get going
400lbs of crawfish
100lbs of sausage - (dont ask)
100lbs of shrimp
60lbs of potates (only about half of what shouldve been)
40lbs of corn (that didnt last long - dumbasses)
with.....TWO 42qt pots
TWO!!!!
42 quart!!!!!!!!
I must've done 40+ batches
It took me nearly 9 fricking hours

well i did post that i had more people than i expected. i got 35 lbs because there was only supposed to be 6-7 people eating crawfish out of the 20 invited and the rest were going to eat burgers and hot dogs. but some people brought friends with them and so i ended up not having as much crawfish as i really needed.
see here is the problem. i did the same thing last year. i asked people before how much crawfish they would probably eat (in lbs) and then went and got two sacks (70lbs worth). then when it came time to eat, not as many people ate crawfish like they said they would and i ended up having nearly a whole sack left over and since they didn't eat they didn't help out money wise. so this year i decided to go smaller since i didn't want to get burned again. this year i ended up not having enough.

I wish that was my backyard. It's actually my gf's dad's camphouse. he owns a couple thousand acres around there. it has a lake on it, a duck hunting pond, 6-7 greenfields, a catfish pond, and more land to deer and turkey hunt on than i can shake a stick at.

4lbs per person is the minimum to go by, for a man more like 5 or 6lbs per person

yeah that's what i ended up doing. i gave a bunch of it away and then kept most of it.

it's a 60qt pot that i got from academy sports here in tuscaloosa.
i got the burner for it there also. i want to get one that stands taller as i do fish on it and my gf and i also do what we call "a can" in which we layer the bottom of a 30qt pot with small corn cobs and then throw, potatoes, carrots, sausage, red hot sausage, onions, garlic, crab boil seasoning, one can of beer, and shrimp into it. you then turn on the burner, let it start steaming good and then cook it for 45 minutes and eat. it's basically a crawfish boil without the crawfish.

I just enjoy cooking outside. My grandfather used to do fish fries all the time when I was younger and now that he is gone I like to do that as much as possible. I never had crawfish until about 2 years ago and then decided that I wanted to try and start doing that. I have gotten it down pretty good and now I want start doing different variations to kind of give it my own signature. My gf turned me onto the can recipe and we do that for tailgating sometimes because it's not a hard recipe. We just have everything already cut up, get out onto campus and setup the burner and the propane tank and the rest is just hanging out, drinking beer and waiting. my dad is about to give me a smoker that he is getting rid of since he got a new one, so i'm about to start to take a try at smoking stuff.
