Son caught 7 pompano off the beach 20 miles south of Corpus Christi today

Great day for a beach run. Lots of wildlife in and out of water. It's been a long time since I cooked pompano, and it's a beautiful easy clean fish. I have a hundred year old cook book published by the New Orleans Newspaper and It speaks highly of the pompano broiled. When in New Orleans in the 70's Pompano in paper bag was the Pompano served in a paper bag. I now think the bag was to keep the fish from cooling between oven and table

Not from cooling, but cooking in a liquid essentially steaming/poaching the fish in wine and aromatics.

i have my grandmother’s copy of that book - with her hand notes written on it. i keep it in the safe. and i’m +50 years old

The bag is for steaming. Most chefs use parchment paper. Fill it with all the aromatics and wine and olive oil, seal shut, throw in very hot oven. This is a French method.

We've been catching Pompano and Smacks all year wading the Galveston surf. (West end) August was prime time with a couple weeks of flawless conditions.

Looked those up on ebay, they can get very pricey if prewar. Interesting find though.
