At our place in Liverpool, we do it both ways.
Bake it casserole like, with melted cheese on top.
When it’s ordered, we top it with a melted béchamel sauce to serve.

We only got the casserole, home-made Mac and cheese on Thanksgiving and Christmas. The rest of the year, it was Kraft out of the box.

I do not care for dry baked mac & cheese casserole. Give me Kraft with fake powdered cheese straight from the sauce pan.

Cover it while baking, add a layer of Velveeta and few spoonfulls of milk near the end and it will be similar to the boxed crap.

I sometimes put a little ham in it, makes it much more flavorful.
