Visiting a restaurant again after awhile and noticing they are cutting corners

A local sandwich place ‘had’ a great chicken salad sub. Visited again after awhile and noticed that now the bread is larger, and the amount of chicken salad is less. The price is more. Coincidentally new ownership recently.

So I won’t be going back.

Is this the only way places can stay in business? I would
happily pay more for the old sandwich in this instance.

I remember a few years ago a BBQ joint opened not far from where I work. Went by there not long after it opened and they piled the meat on the sandwich. Went back a few weeks later and they were weighing the meat on a scale before putting it on the sandwich. About a month later they were closed.

We eat out 5-6 times a week for dinner and 5 days a week for lunch. Lots of changes since 2019 and very little for the better.

Oh I'll definitely tell you the name of one doing it. Ichiban's off Essen. I remember going back in the day and place was so clean and food was so damn good. It's still good, but you can see that since the old man isn't there anymore they are trying to go downhill. Place isn't clean as it used to be, boxes everywhere, floor and tables sticky and not clean, plates cracked chipped, sushi rolls getting smaller, krab mix not as fresh tasting.

I know this is my opinion, but me and the wife are about to write it off as it's not worth the drive like it used to be.

I always thought Ichiban was a sushi restaurant.

so do you think this is because they are cutting corners or just busier and fighting labor problems like 99% of all restaurants? I eat at Ichiban often enough to feel I can say the quality of the food is still there. I can't think of a single restaurant that hasn't suffered service issues- especially post Covid. Ichiban is not immune. But I also find it a lot busier than before.
I don't think your observations are the result of management cutting corners. I think they are more the result of a lack of willing, competent workers to deliver the level of service you remember. And its exacerbated by being busier than it was "when the old man was there".

See I don't find it near as busy as say 2008-2015 era maybe? It was always packed and so was the hibachi. I know to each is own and experience will vary, but man we used to go WAY to often and it's just the quality of sushi, portion sizes, overall quality of restaurant condition. I don't even want to say it's a worker issue. Like I see the same managers (maybe his kids?) there every time and the same issues keep happening. At some point it can't just be meh workers lazy.
