Anybody know where to buy some skin to make hog head cheese? In the Baton Rouge to New Orleans area? Thanks

split pigs feet work well if you can't find skin

What’s that local grocery store in Gonzales? They have it, I think. Or at least they make it.

I've bought all kinds of charcuterie stuff from Oak Point in Central. Give them a call and ask.

Like mentioned, get some pigs feet. I get mine from a Hispanic operated store near me called "Ideal" in the N.O. area. They have a great produce section with things most regular supermarkets don't carry and you'll see stuff in the meat section you won't see in many local markets.
I'll use pork shoulder or some pork butt and the feet to make my hogshead cheese.
