DJ Durkin, unless he’s holding out for a HC job. He did a 1-yr transformation of the Ole Miss defense, so aTm poached him. He had the number 1 defense in the SEC last year and is currently available, so he checks a LOT of boxes. ...

re: .45ACP pistol choice?

Posted by knight4 on 1/1/24 at 7:27 am
I also have an HK USP 45. It’s the most reliable pistol I own (other than a revolver). I reload and have been able to feed it anything from lightly loaded lead SWC rounds for practice, to hot, jacketed personal defense rounds, and it doesn’t jam or have a failure to fire, ever. ...

Agree with CP3, above. Plan to include 15% tip. Boat ride will likely be 1-1/2 to 2 hours each way, depending on seas. Not a bad idea to take Dramamine, or something similar, especially if you haven’t gone before. I’ve made 2 great trips with Paradise Outfitters , Capt. Scott. Good luck!...
I grind 10# venison with 10# brisket and 2# of bacon, and stuff into the LEM 2# bags with no seasoning, that way they can be used for anything. It stretches the deer meat and gives it a good amount of fat. I only coarse grind once, to avoid affecting the texture of the meat from too much handling....

re: Is hunter orange a legit safety issue

Posted by knight4 on 11/30/23 at 11:18 am
I faithfully wear orange, even though I’m hunting on private/leased land. I do, however, question the value in wearing orange when I walk out 30 min after sunset…if someone is taking a shot at me, they have to be shooting at a flashlight, or noise with light, neither case would orange help. And af...

For burger meat, I mix 10# deer with 10# brisket and 2# bacon…no seasoning, so it can be used in anything, but makes GREAT burgers, among other things. ...

re: Reverse searing steak

For medium rare filets (1.5” to 2” thick), I put on grill for 5 min. each side at 300F, then take steaks off and heat grill to 600F and put the steaks back on for 4 min. each side. Easy to do on BGE or ceramic grill. For gas grill I try to have one end burner on high the whole time, get grill to 30...

re: Help - Boat Corrosion at Drain Plug

Posted by knight4 on 9/8/23 at 11:14 am
As long as you have dissimilar metals, you’ll have galvanic corrosion. I’d go with a traditional/old school expandable rubber plug (or else the threaded plug shown previously). Other option is to keep all your dissimilar metals painted/coated, so the water/electrolyte can’t enable the corrosion. ...
I haven’t been in a few years, but used to be able to get some shrimp at the BR Farmer’s Market. They had been flash frozen (maybe on the boat, not sure). Bought them many times. ...

On the water, you can go to Fisherman's Wharf, Bubba Brews, Sam's Pizza, Back Porch Grill, and 501 Lakeside (haven't been personally, but hear good things about food trucks). If you want pretty good, inexpensive Mexican food where it's easy to get seated, there is Jose's on Hwy 7 south of town (n...
Back in the day, Redemptorist was the basketball school in La. About 8+ state championships and turned out players like Howard Carter, Derrick Taylor, and Tom Curry. The ‘83 team was bigger than LSU’s that year. ...
The point some are making is that Bertman won more CWS championships in years when he didn’t win the SEC tournament. ...

re: Sous Vide Recipes, Tips & Tricks?

Posted by knight4 on 12/26/22 at 11:52 am
Definitely doesn’t have to be an $800 sous vide. It’s a game changer for a few dishes for me, because it’s eliminates the risk of over/undercooking meat and ensures moistness. Best if you can sear on ceramic grill like BGE at ~650 deg., or else cast iron. Pork tenderloin sous vide Sous vide at ...
I put low temp wiper fluid in my vehicles (like RainX All Season)…protects the sump and pump, and it helps ice melt faster when sprayed on windshield. Also, I use some RV antifreeze in fountains to protect the pumps if I can’t drain them…it’s safer for pets, birds that might get to it and is safe f...
You would do good with any of the 308 rifles mentioned. I would spend $$ on excellent scope rings (Leupold or other high end), and then get the best scope your budget allows. Also, I would let a gunsmith mount the rings and scope and bore sight it for you. That should get you going with a rifle t...

re: Best wood to use to smoke a turkey?

Posted by knight4 on 11/23/22 at 4:37 pm
I’ve been brining my turkey for the last several years, and think it’s better than when I fried them. I really like the brine recipe from Pioneer Woman, and she substitutes Jack Daniel’s for half the apple cider. I use a combination of pecan and cherry wood on a BGE at 325-350. https://www.thep...
