My potato plants have lost their leaves and have green stalks. One of the stalks is dying the other two look ok. I planted them back in late march or so... When should I try to see if I produced some potatos?

Well, it's been 120 days or so since you planted them and I would think they should have produced potatoes by now since most plants start producing by 50-60 days after planting.
You do want to harvest all the potatoes at once and the above 50-60 days is for intermittent harvesting as the plants produce more during their growing season.
A quick look and you can harvest new potatoes (small ones) in 70 days and for the larger potatoes, you should wait up to 130 days, so you should be OK to harvest if there are any to harvest.

Typically once the leaves are turning yellow it means its just about time to start digging up your potatoes.
Hope you live up north b/c late march is rather late to be planting potatoes in the south. curious what your production will look like.
Potatoes aren't hot weather crops, but Sweet Potatoes are.
The time to plant potatoes in the south is in early September and then again in early February.

Rule of thumb from my dad since I was a kid was they are ready to pick when the leaves turn yellow. Has never failed me.

Small potatoes are still potatoes. Always plant enough you can dig new potatoes to hold you over until the other ones get full size.

This was my first time just trying, will be interesting to see what I can get out of them.
