A pouldeau is a coot. Also known as a mud hen. A water chicken is something different, the common moorhen.
The name Chanticleer, which translates to "sing clearly" from French, is associated with a proud and fierce rooster who dominates the barnyard and is known for his powerful crow. It is derived from the character in Geoffrey Chaucer's The Nun's Priest's Tale.
The first time I recall hearing the name Chanticleer was from an animated movie my kids loved. They were around 7 & 8 when it came out. The rooster with the Elvis vibe was Chanticleer.
