Probably just like your phone is listening to everything you say.

Your cell, computer, laptop, car, or whatever else is connected is also listening to you.

I have had adverts pop up on my phone after talking to people in a casual conversation. They are definitely listening to us through our phones.

Think about how much the ai software can spy, companies use it for guidance on it projects, all sorts of passwords, servers and such get asked about. If those licensed co-pilots are capturing that data, then there will be no hiding

I know everyone has their little anecdotal story about this but here's mine.

was watching top gun Maverick when it came out a few years ago. there's an aviation term, "coffins corner" that they use a few times. I'd never even heard the term before. Let alone said it or googled it.
but there it was... an article about coffins corner in my news feed a few hours later.

it's kinda crazy that we all basically accept this is going on and do nothing about it.

All the streaming TV content viewed on whatever device is analyzed to develop viewer profiles. This information is used to target viewer with advertising, suggested content, etc. Nothing new, but the unknown to me is how well developed a profile can be.
Think about all the available internet content available about yourself, and super computers crunching this information on a billion people or more.
