Any recommendations for companies to order from and also cuts to have a tuna ‘tasting’ for a party? I ordered Japanese A5 for my birthday last year and looking to do something similar but with tuna. I have access to Joe Patti’s but I’ve never seen anything but fairly standard yellowfin steaks.

Are you looking to do nigiri or sashimi preparations? I've heard good things about yama seafood. Been looking at getting some blue fin otoro myself from there

What you really want is some dry aged stuff. How much time before the date?

2-3 weeks time.

Honestly I don’t know my plan. I’m a reasonably good cook. I just wanted to order some stuff online and prepare it simply. I was assuming the good stuff would take very little proper cooking/ prep. I could be wrong

Can’t help you with tuna, but where’d you get your A5 from?

The Meatery

Meat was fantastic. I actually ordered 2 A5 and one Australian Wagyu that was supposed to be BMS 8-9. They were lower end cuts so not like a filet or strip. Around $50-60 each for 8 oz. The marbling was incredible. Very easy to cook and easy enough process.

To be honest I don’t know, a little of both. I was just looking to try 4-6 different cuts for fun and see how much difference there was. Whatever would be recommended and preferred for each cut.

I was going to get a couple lbs of regular yellowfin, I can probably get some blackfin and yellowfin locally. And then some bluefin otoro and whatever else I could find. Make some sushi rice, probably make a little poke, a couple bottles of sake, and just have a sort of family style feast.

Same on Honolulu Fish Company. Worked out well, but then they raised the order limit. I think they’ve lowered it again.
