Anybody else used to destroy these things back in the day? Alot of restaurants would put them in a basket on the tables. The garlic and onion flavored ones were great. Slap some butter on them and delish!

Anyone find a solid replacement for these old staples??? The Old London brand stuff in the store ain't the same.

The typical old school Louisiana fried seafood joint cracker basket on the table would be like 75% saltines 20% or so captains wafers, and exactly two packs of the Melba toasts.

It was always a battle royale free for all with the family after you first sat down.

Yeah, and the occasional place would toss in a couple of those bread sticks as well.

I'm sure the real Melba toast is good, but we would fight over it at restaurants and buy the boxes for home. I have made meals off Melba toast and butter. That butter needs to be soft, though, so you don't break the toast.

Who the hell else knew they came from Escoffier and were a reference to the same thing as Peach Melba?

Dude

Such an honor to reply to a post of yours

I did not plan to post this close to "national melba toast day"

Wouldn't have even imagined such a day even existed. Oh, your app is a life changer by the way

I had been trying to recall a Fitzmorris show where he said (I think) that all or almost all Melba Toast in the US was made in New Orleans. I think this bakery may have been what he was referring to:

quote:

The bakery, which had roots in Chattanooga, Tennessee, was founded by Francis Turnbull in a shotgun double on First Street, and originally focused on ice cream cones, according to a 2011 article by The Times-Picayune's Judy Walker. In the 1940s, Mrs. Turnbull took over the operation, which also began packing baked goods for Nabisco, Kraft, Keebler and Lance.

Turnbull Bakeries, N.O. company known for Melba toast, closes

ETA: Then I found this:

quote:

Wayne and Whitney Turnbull have reopened Turnbull Bakeries, the Melba toast factory that Wayne's mother operated in the Lower Garden District for decades. Katy and Whitney, granddaughters of Elizabeth Turnbull, plan to run the factory, known in New Orleans and the Gulf Coast for the garlic rounds.

NOLA.com

ETA2:

quote:

In the 1940s, the Turnbulls started making melba toast. The thin, crisp mini-breads were named for Dame Nellie Melba, opera superstar and the dream of men around the world. One of them was the French master chef Escoffier, who perfected Melba's own toast recipe. (She ate her toast when she thought she was becoming too plump.) The Turnbulls were so good at melba toast that they made it for almost everybody in the industry, from Nabisco to Lance to Keebler's. They made New Orleans the Melba Toast Capital of the World.

Solid post StadiumRat

That answers alot of my questions. Melba toast is strange to me as it doesn't consist of much. It is a dry and almost burnt cracker, yet I find myself now looking for them....while waiting on a fried shrimp po boy to get to the table or just snacking around the house
