Lamb Heart Ideas?

My son brought me a bag of lamb hearts from the local farmer’s market. Looks to be about four of em. Most Google returns are for braising in a stew. I’m not dismissing that, but it’s a little warm for me to get excited about a stew. Did see one that called for slicing thin and quick searing in a pan.

Slice, marinate in something acidic with sliced onion. Grill at high heat, skewer if you want. Go buy some tzatziki at your favorite Greek carryout. As a very lean muscle, it will not be as flavorful as lamb shank or leg...good anyway.

I would marinate grill it and roll it up with Grecian sauce, cucumber, tomato, lettuce. I probably make curry with the remaining.
