I've not prepared, cooked, or eaten rat before, but shouldn't a skinned rat be red/pink like a squirrel or rabbit? Why do those look completely white?

Squirrel cooked in black iron pot served over rice with white beans. Damn good. Only second to doves.

I think what you want to consider here is the diets of squirrels and rabbits versus that of NYC rats. That said, I’m gonna go ahead and take a hard pass.

**We may be on slightly different wavelengths there which is my b, but still an interesting thought. And by interesting I mean not interesting.

I don’t believe those rats have been skinned. Only the hair has been removed. Like when you scald a pig before a boucherie.
