If you wanted a specific cabinet size

I need a linen cabinet in my laundry room

108"x40"x24" with doors.

What would you do? Build yourself? Have someone come in to build, or order off some site? If the 3rd, what site?

Sounds pretty simple and straightforward. Build it.

If you don’t think you can do it, call a cabinetmaker.

Build it myself. Pretty simple to do provided you have the tools.

If it needed special doors, I’d order them. Either from a cabinet shop or online. Lots of places to get doors.

If you decide to build it yourself, use plywood for the carcass and the type depends on how you will want to finish it.

For the door frames I suggest using poplar since it really stays straight and is not as expensive as other more exotic hardwoods. I've had perfectly straight 1 x 6 pieces of cypress, oak, mahogany, etc. take a bow once run through the table saw cutting them down to size for building cabinet doors.

If you're buying doors I would start there. Might be able to find some doors close to the size you need. Custom sizes will cost a lot more. Find that then build cabinet to fit the doors.

If all you want is a cheap paintable cabinet, you will be surprised how cheap you may be able to have someone make it for you. Price the material then factor in your time, then double that. Then call a local cabinet shop and ask what they would charge to build it and come stick it in your house.
