I did a small Prime Rib last night

I am doing a big one Xmas eve 17lb. I usually do on the pit but going to do in the oven this year just for convivence. I bought a small 5 lb to try the reverse sear. I cut the ribs off, seasoned the day before and put in the fridge uncovered. Put oven at 250 and pulled it out at 117 deg. Rested for 45 minutes. Slathered a stick of butter over it and put back in the oven at 500 deg for 10 minutes.

It was perfect medium rare all the way thorough. Best one I have ever done.

Question for the 17lb would you cut in half or leave it whole to cook?

I cut it in half. It gives me 4 end cuts, not as rare as center cuts, to serve to those who don't like rare/med rare

I say keep it whole.
I’ve never undercooked a big piece of meat. You can always cook it more.
I have overcooked them, and it’s a travesty when you do. You can’t ever uncook it.

I saw someone post where they cut the rib portion to season and then tie back together for easier removal after the cook.

I now cut mine into thick steaks after the cook. Everyone here prefers two sear sides.

I picked up a nicely marbled 12 lb choice boneless ribeye roast for $12.39 at Sams today.

Which brings me to this. Two local grocery stores, think Kroger/rouses like, had in their weekly ad and posted in store " certified angus beef prime rib roast, $8.99/lb. So I go in to look them over, and this older lady is looking at them as well, while the beef stocking baw looked on, and she asks "do these look good". They had no select or choice markings so I ask beef baw, "are these select or choice grade"?. I thought they looked select grade.
Baw: "it's certified angus".
Me: Thats a brand, what usda grade are they? No response as he wheeled his beef cart away from my inquisition.
I leave, old lady leaves as well.

Sam’s has surprisingly very good meats. I’ve been buying whole ribeye rolls and tenderloins from there for years.

Last year the FIL tried to pass off a select grade prime rib for Xmas dinner and I called him out. Words were exchanged and I made my point. Just ate sides instead of that dogmeat roast.

I get mine at Costco every year. This year the price for Prime was on $16.99/lb. I got a 10.75lber with bones on it. Seems like,last year they were 18.99/lb. Before the Chyna Virus I remember gettin them for 13.99/lb

Winn Dixie had whole bone in on sale for $6.99 lb last week. I went in last Thursday about 9 in the morning. They were cutting them anywhere from 5-8 lbs. I wanted a real whole. Meat guy brought out a huge box of whole and let me pick. I got a 17lb 10 bone that was well marbled.

Meat at Rouses sucks. Their "choice" usually looks like select.
