Jambalaya cooking question

I was given a jambalaya recipe from a friend. He taught me how to cook everything and it came out very tasty.

I'd like to cook this at home for my daughter's birthday party, but I don't have a cast iron pot. Can I cook it in a big crawfish pot, or does that not work? I need to make one large batch with how many people are coming to the party (approx. 60).

I'm obviously very new to jambalaya cooking, so any help would be appreciated.

I wouldn't cook in a crawfish pot, you need something heavy that can hold heat. that's why cast iron is always used.

thats not a good idea. the cast holds the heat and I would suspect you would burn the rice on the bottom during the simmer and not cook the rice at the top?

1st choice is cast iron. 2nd choice, Magnalite/McWare....After that, just call Jambalaya Shop and lie to everyone that you cooked it.

Jambalaya goes a long way so you have to think about the appetites of the people invited.

Your daughter's birthday party would depend on how old she is going to be. A kid 12 or under won't eat near as much as a group of teens, especially if boys will be at the party.

Teenage boys can often be bottomless pits when it comes to food they like.

I use a heavy cast iron pot to make mine but in a pinch I have used magnalite and even a heavy duty stainless steel pot with a nice thick bottom to better distribute the heat.

You can also use one of those metal heat diffusers you put between the burner and the bottom of the pot to more evenly distribute the heat and avoid hot spots.

I dunno how some of you do it but I would be extremely nervous cooking something like that for the first time for that many people. Im assuming you havent done this before.

Buy a 10 - 12 qt cast iron pot and borrow another one from a friend. Do 2 batches simultaneously in both pots.

If i'm not working, I'll bring a pot over and help you.
I don't mind pitching in if helps relieve some stress for you.

I have done one in a turkey frier. It came out fine, but it took some work/playing with the flame. You have to make sure your liquid is at a rolling boil before the rice goes in. You cant cheat it, or the bottom will burn.


If you have a magnalite pot that would be much easier to deal with.
