San Francisco to Los Angeles road trip

Planning mid-March week long trip. Have done both cities several times, so not looking for recs at each end. But have never been in between.
Any must see sights/attractions, restaurants, wineries, etc? Have nights planned in Carmel, Big Sur and Santa Barbara.
Hoping Hwy 1 is fully open by then, but may have to detour. Is San Simeon/Hearst castle worth seeing? Right now, it would require going out of the way.

We made that trip the opposite direction in 2019 and Hearst Castle was one of the highlights for us. We went in blind and didn’t know much about the history and enjoyed the tour. We did the Grand Rooms Tour.

Hearst Castle is very much worth it. We are going back in the spring to see it again. Spectacular!

Take your time and just relax. Hit the small towns if 1 is open.

I have made that trip on hwy 1 twice and have done parts of it a couple of other times. It is definitely worth talking. And Hearst Castle is definitely worth seeing.
Other stops are Carmel, BigSur, Monterrey, solvang, Cambria.
Wineries
We spent a week in Paso Robles last year and loved it. It is about a half hour inland from Cambria and San Luis Obispo. Fantastic wineries, restaurants and scenery.

Going to San Luis Obispo county for spring break - Morro Bay, Montana De Oro in Los Osos, elfin forest, Avila Beach. Then Solvang and Santa Barbara.

We really enjoyed Los Olivos and Los Alamos as places that are a little more under the radar than Carmel and Santa Barbara. But that drive was one of my favorite trips.

Hearst Castle for sure.
Don't overestimate your driving skills on Highway 1. Speed limit or under and eyes on road. Some beautiful views but you don't want to join the cliff side.
