What would you add to a Thai flavored hot sauce?

I’m fermenting a half pound of Thai chilies probably for about a month. Plan is to process and run through a food mill then add ingredients to give is more of a Thai inspired flavor. Planning on adding garlic, brown sugar fish sauce and lime juice. Thinking of making a “tea” using rice wine vinegar with fresh ginger, lemongrass and cilantro, straining and adding a bit of it as well.

Sub galangal for ginger if you have access to it.
Kaffir lime leaves & Thai basil are other Thai ingredients but, too many flavor combinations might muddle things up.

Sambal Olek Chili Paste or Huy Fong Chili Garlic Sauce.
I’m aware that neither are Thai. But I’d try to copy that without the preservatives.

If you can find it, you could replace brown sugar with Palm sugar.
