Christmas brisket in game thread (with pics)

Seasoned and ready to go.
I decided to make some tallow for the first time while I let the brisket come closer to room temp.
Just threw the brisket on the pit.

I’m on an offset smoker. Old Country Brazos.
Fwiw I am usually a straight salt and pepper for brisket, but was gifted some brisket rub so I thought I’d give it a try.

I'm not one to second guess a man on his smoking skills, but that brisket looks a little rough.

Trimmed more fat than I ever have. I rendered about 16 oz of oil from the trimmings.
I usually try to leave a 1/4 to 1/8 inch of fat on. Which was the case with this one. But I’m not looking to make it look pretty with the trimming.

Took this photo around 2AM
I passed out at around 2:30 and woke up around 5:30 to see that my damn maverick remote lost connection. Pit temp and meat temp were both 140.
Got back on track after that.

Wrapped it about 11AM. And finished it in the oven.
Just pulled it at 1PM Resting it now.
The stall was insane for this one. It seems it only increased 10 degrees from about 2AM TO 10AM. I started getting worried that it may not be done until the evening. After I wrapped it, it went from about 160 to 200 in 2 hours.

It was damn good. I know the trimming was shotty but who gives a frick if it tastes good?
