How come there are no great submarine warfare games for consoles?

It seems a good one would sell like hotcakes. Sinking ships with torpedoes, trying to avoid depth charges, outfoxing destroyers, etc. That would make a great video game!

I played the hell out of this game as a kid.

I think for it to be interesting they'd have to make it some sort of SIM game in addition to the rare times anything exciting would happen with the sub

Seems like you'd have to make it a Naval game, where you're controlling subs but also destroyers, battleships, aircraft carriers.
I did play a PC game about 25 years ago where you were in charge of a fleet of subs positioned throughout the theater of operations, and you'd switch between them, so there is a framework where it could be done without a significant lull in action.

Not on console but World of Warships has subs going up against cruisers, destroyers, battleships and carriers.
Pretty sure that their console version; World of Warships: Legends does not have subs yet but it is FTP.

There's a good one for PS2 called Sub Rebellion.

Would be cool if it were a part of an open world RPG similar to AC Black Flag. Just hop in your sub and go hunting, but there’s other things to do as well.

Played the shite out of this as a kid. Think Twisted Metal but with subs.

He’s not wrong. In World of Warships the submarine is definitely the “10 minutes of boredom, 20 seconds of excitement “ ship.
Well, not quite that extreme, but still
