You can find several 3rd party wireless CarPlay adapters on Amazon.

FCC seriously takes licensees operating outside their legally permitted frequency and power spectrum. Good luck if you decide to pursue, it may take a while to get through the bureaucracy.
But, once done they'll take you seriously and follow up. They love finding this type of stuff and dropping the hammer.
I tried to call last week. Was told their consumer complaint line is mostly to report things like getting a used cellphone when you bought a new one.
I asked if they were the same FCC that would investigate things like pirate radio stations, and was told that they would monitor those complaints but not investigate them. No idea what that means.
Rep suggested I call the LA public service commission.
I've noticed that when traveling on I-10 my wireless Carplay goes out (console reports WiFi interference) as soon as the Marriott hotel at Corporate is in view. As I get closer to that building, the connection briefly restores, and then fails again as I get further away with the building still in view. Once that building is out sight, I have no issues.
I know that ~10 years ago there was a local ISP selling wireless/radio Internet access to anyone with line of sight to the top of that building.
This is obviously conjecture .. but something in that area is causing problems. Just need to figure how to report it.

That's very odd, WiFi's modulation scheme is more or less immune to far-field RF interference. Must be a hell of a signal. It "disappears" when you're close to the Marriot because at that point the building is blocking their transmission beam pattern, which from your description could be omnidirectional. I'm guessing about the omni part.
Follow the link below for FCC Consumer Complaints and file under the "Radio" section using the Marriott address. And, search for the FCC New Orleans office, call and see what they say. Search the Marriot address too for "FCC Licenses" and see if anything pops up.

I'm not sure how wireless CarPlay works, WiFi or Bluetooth. The car reports WiFi interference, but I wouldn't be surprised to learn it's actually a bluetooth problem like others have reported issues with.
Unfortunately, it's not just a minor audio inconvenience as it causes the entire vehicle infotainment system to basically reboot. Music, navigation, rear seat video, phone calls, etc... all get interrupted. Hope this complaint gets me somewhere!
eta: Wireless CarPlay uses both the Bluetooth connection and a closed WiFi network to communicate with the phone. This allows both sufficient bandwidth for data exchange (WiFi) and sufficient control protocols to exchange commands with your phone (Bluetooth).Apr 28, 2021

It cuts off for me every day in that area. I assumed it had something to do with the construction project that just began at the split??

Yeah it's been resolved for me too!
Complaint was submitted on 10/10.
Early AM on 10/12, I received this acknowledgement from FCC:

No idea if this complained resulted in the issue being resolved, or something else, but I drove down I-10 a few days later and had no interruptions with Carplay. I haven't had it happen since!

It's been happening to me for months and I drive that area almost daily.
It's also been happening about every time I cross the new miss river bridge as well.

Still happening to me 98% of the time between College and the 10/12 split. Some days it doesn't but majority of the time it goes out completely
