Chicken Stock from feet

Anybody ever used chicken feet to make a stock for gumbo?

Yes.

I would recommend flash boiling the feet for five minutes, then drain the water, and then simmer. This results in a cleaner broth.

Yes. Not sure if it actually helps or not but I'd cut them with a cleaver at the joints then leave in a crock pot for a while. It turns to jelly when cooled.

Never have to be honest and can't recall ever seeing chicken feet in the store---at least not Rouses or Winn-Dixie. I would think an Asian or Hispanic market may have them readily available.

I usually make a couple gallons of chicken stock a month since I do use a lot of it when cooking and buy leg quarters and split breasts when on sale to use the cut-offs for making my stock.

I'll let that cook no less than 12 hours and wind up with a stock that will gel when cooled in the fridge. I just ladle it into quart freezer bags, burp all the air out of them and seal and freeze to use as needed.

I like using chicken wings for stock; you still get lots of collagen without worrying about funkiness from the feet.

With the price they are selling for a pound, it makes no sense to use them unless you're just using the wing tips.

Damn things are 3+ times the cost per lb. of a whole chicken most of the time. Two weeks ago I bought two 10 lb. bags of chicken leg quarters for $.39 a lb.------about 10 times less than the price of wings.
