Haven't been in over a decade. Will be spending a night there next week.
I want good food, good drink, and preferably a few cougars.

Boudro's - they cook much better than they can spell.

Yep. Boudro's is the best restaurant I have been to there.
The Menger Hotel across the street has a nice bar with a lot of history behind it. Teddy Roosevelt used to recruit his Rough Riders in there.

Take a short Uber ride to Rosario's

I’d go to the Esquire Tavern.

Another vote for Boudro’s and the prickly pear margarita. But esquire tavern is great too

One of the coolest spots I visited when I went.

This is the answer to the bar on the river walk. If you want to Uber, go to Hotel Emma bar at the Pearl.
