Ok then do we have any idea what made him basically immortal? Is it as simple as sorcery/magic? Or do we have any hints as to why he's destined to roam as a wight halfbreed?

Not really, it had to do with one of the stories from Nightfort.
It's from a Bran chapter when they are at the Nightfort.

They sent most of their men and all of their ships to rescue the Wildlings from Hardhome. Now all their men are stuck on the shores because of storms and the Wildlings are trying to attack the ships while wights are venturing out into the water from the forest.
Basically, Eastwatch is 1 or 2 days away from getting a huge undead butt ramming.

What's interesting to me about the Night's King story is that it certainly implies that the Others are more then what we take them to be.
