What little Sanderson I’ve read I like.
I watched his lectures from BYU on creative writing and one thing he said was he feels obligated to the readers to finish his series even when he’s not the most motivated.
I immediately thought of the fat man.

I think he's actually talking about Rothfuss since Martin has two books to write and Rothfuss only one.

Sanderson has the success and accomplishments to issue such a statement and it have actual meaning.

So what’s a good place to start with Sanderson (I know he finished Wheel of Time)? I feel the need to support the guy on principal alone.

Start with mistborn there is 1 completed trilogy and a follow up that had 3/4 books done. Both are good but I thought the second was excellent.
He has another series that is supposed to he great but is only like 4/10 Books done.

Definitely start with the Mistborn trilogy.
If you enjoy that then I would recommend following it up with Warbreaker. It's a one off novel but ties into his 3rd book in the Stormlight Archive series in a pretty significant way. Plus the Wax and Wayne books are only one book away from being finished and you might as well wait for that one to come out before starting the others.
Then you could read either the Wax and Wayne books or start with the Stormlight Archive. I'd recommend starting Stormlight Archive and reading Way of Kings. I don't want to overhype it but it's my favorite series.
Then you can read the Wax and Wayne books. The last one will probably be out by then.
And then you can read the Wheel of Time saga and hope that the next Stormlight book is out by the time you finish. That's how I spent a year in between Words of Radiance and Oathbringer
Also read the novella Edgedancer in between Words of Radiance and Oathbringer. You can wait and read Warbreaker in between Words of Radiance and Oathbringer too.

Ya but I just imagine people "sick of Martin's shite" probably want to read a completed series

There's supposed to be a significant time jump in between 5 and 6 with the second half of the series focusing on a new set of characters.
Might as well go ahead and start. Book 4 will be out in 2020 or 2021

I burn through good books in a weekend or so usually. Sometimes a night if it isn't too long. Just too many finished series out there for me to jump into something unfinished unless it something like gentleman bastards or malazan where they are largely self contained
If there is a big time jump I'll probably read the first half whenever that 5th book or the end of the first part has a planned release date.

Most all of the Cosmere books/series are good reads, but the first Mistborn trilogy is probably the best place to start.
In universe chronology of published works:
White Sand
Elantris and The Hope of Elantris
The Emperor's Soul (takes place on the Elantris world)
Mistborn Era 1
Warbreaker
Shadows for Silence in the Forests of Hell - enjoyed this one.
The Stormlight Archive
Mistborn Era 2
Arcanum Unbounded essays (these are the write ups concerning each solar system, I think, not the stories themselves)
Sixth of the Dusk - I really liked this one
"Elantris" and "Warbreaker" are both going to have sequels at some point.

It's his first book and you can tell it's his first but it's still very unique and well told story.
