Centipede is not a fast grower so using high N fert is a waste. If they put it out at 2lbs per thousand it wouldn't be too high but you'd get ineffective coverage. If they put it out at 4 then yes, that would be a heavy application.
Zoysia is a slow grower so you are going to pay for that time.

Generally you don’t dethatch St Aug. I’ve done it once because the thatch layer was so dense.

Just rent a Ryan/Bobcat aerator, mark your sprinkler heads and valve covers and go to town. Based on what you are looking for you wouldn't have to do anything after.
It won't take over but when the St Aug dies back from fungus the carpetgrass will move in.
