Has anyone on here done a France trip where they did Paris for a few days and then headed south to wine country? Thinking of making a trip and heading toward Bordeaux to see left and right bank especially Pauillac.

It's easily doable as there is a high speed train from Paris to Bordeaux.

Yes.
In April of 2024 I took a week long Viking Bordeaux river cruise and then took the train from Bordeaux to Paris. It was a great trip.
The cruise started and ended in the City of Bordeaux which is an easy train ride to or from Paris.
We got to thoroughly explore all of the major wine regions of both the Left and Right Banks We went to Pauillac but on the Left Bank day we spent most of our time in nearby Margaux.
If you are looking for a base, Bordeaux is the major city but I found the most charming and atmospheric town in the region to be St. Emilion.

Not exactly what you asked for, but we rented a car in Paris and drove to Reims, the unofficial capital and the largest city in France’s Champagne region.
The cathederal there is amazing!
Didn't go to Epernay, but that looks amazing as well.
Both are easy drives or train trips from Paris.

We took the high speed train to Reims. It was easy and you don’t have to worry about driving after sampling champagne all day.

Champagne region very easy from Paris as a day trip and there are quite a few local guides. They will pick you up and take you to some lesser known houses but could also just visit the grande dames.
Beaune, and burgundy and Beaujolais, areas also very easy to reach from Paris by train. And then just use Turo to use a car and drive around. Did this last summer and it was aces.
Rhône a bit further afield but same as above. Train it. Then grab a car.

renting a car on the outskirts of Paris and driving to the Loire Valley or Sancerre is very do-able

I would strongly recommend Le Choiseul in Amboise as your home base in the Loire Valley. Le Choiseul is a luxury hotel and restaurant located directly on the banks of the Loire River in the heart of Amboise, in the center of the Loire Valley. It is about a 3 hour drive from the Paris Airport and an easy drive. It would be easier to rent a car at the Paris Airport than to take a train and try to rent a car from there. Car rental is very easy in France and with Waze, directions are also very easy. We also bypassed most of Paris and it was not difficult to drive in that area around the airport and around the outskirts of Paris.
The Hotel is undergoing a renovation, but I think it is supposed to open up in June, 2026. The restaurant, Le 36 was a Michelin star restaurant (not sure if it still is) and we ate there twice because it was included in our hotel rate. It was fantastic. Their website says closed, but I think that is just for the renovation as well. The hotel is riight on the river and a perfect location for travel in the Loire Valley. We stayed 2 nights at the Hotel. We visted Chateau Chenonceau and Château de Chambord one day. Both amazing Chateau's.

We are staying in Amboise but we have reservations at Hotel Le Clos d' Amboise which is just a few blocks from yours. We will be sure to check out the restaurant though.

I don't care to drive in Paris. When I returned our rental car at the airport, I just took an Uber back to our hotel.
