I’m in the same categories you described OP, and go somewhere each year for my birthday solo.

In the last few years I’ve done Boston, Key West, NYC, Los Angeles, Iceland, and Cancun.

Any of those were good choices as they mix in anything you may be looking for .

Summertime, I’d go to key west, the vibe there is so chill and relaxing, I’m not a beach person so I just drank and ate and hung out

I'd go hiking, because that's what I like to do. I've never been to Crater Lake, so that would probably be my choice, since you are requiring stays in the US. Or maybe I would go to Puerto Rico and hike in El Yunque National Forest, or even over to St. John to hike in the Virgin Islands National Park.

But, yeah, I would encourage you not to restrict yourself to the USA. I spent yesterday in Istanbul and loved it (again). Today, I am in Sulaymaniyah, Iraq for the first time, meeting some friends (I went to a teenager's birthday party). It's always fun to experience genuinely new places.

And depending on where you go, international travel has the potential to be much more economical than travelling domestically.

I know you said US but Ireland would be awesome. Rent a car and stay in bed and breakfasts. Spend a day or two in Dublin to check the boxes then head west. Once you get off the beaten path and out of the tourist areas, the locals will talk to you and you can meet some interesting people. Plus, it's beautiful and has plenty of activities. I'm not sure what issues there are with Brexit and covid but Northern Ireland shouldn't be skipped. FYI you can drive across the whole island in just over 3 hours.

In the past year I went back home to Vegas and drove out to Utah for some hiking, San Francisco and Yosemite, and San Diego. All were good spots and easy to manage. I would go out of the country but I did not want to deal with Covid BS at the time. I would highly recommend London as it had everything but a beach.

Asheville--32 microbreweries (at least when I was there) in town. Lots of great restaurants. Easy hiking in the mountains minutes away from downtown. Lots of rooftop bars.

Colorado, hit all the ski towns, plenty of hiking, local festivals, eateries etc. I'd take my own vehicle (from Houston) to avoid the rental car rape that is ongoing. Don't know where you are coming from.
