Pros/Cons/Tips of Traveling with 11-14 month old

We used to try to take at least one 10-14 day trip every year before the wife got knocked up. We're trying to get back to it this year and because of work schedules, we would ideally want to do it when the baby is just about a year old.
Thankfully, we have options to leave him at him home with grandparents for the duration, but just curious to hear some thoughts on traveling with or without. Obviously, I want him to join us once he can start remembering the trips, but for now, it seems like a bit of a burden, although I've heard from a few family friends that they loved bringing infants on trips.
Destination is still up in the air... looking at 10 days max this time, maybe fewer if we leave him, to not be a burden.

Let the baby stay with grandparents, provided that you don’t use them as the regular babysitting service. You and the little lady go have some fun. Keep it to 5 days and have an option to get back sooner if there’s an emergency.

My son has been traveling with us since he was six months old. Is it more of a burden? Sure. But I wouldn’t trade those times for the world. He’s three now and loves the whole experience of the airport, plane, beach, vacation house, etc.

There’s no blanket statement that will appropriately answer your broad question.
Each family’s travel situation will be impacted by many variables including but not limited to-
Where are you going?
What are you expect to do once you get there?
Temperament of the child and the parents?
Budget for trip?
Are both parents individually capable of independently taking full care of the kid?
Some parents could have a great time backpacking and camping with the right year-old kid for a week or longer.
For other people that would be a nightmare.
From your OP it sounds like you need to leave the kid with the grandparents and travel alone.
Let the grandparents have a trial weekend or two to watch the kid before you book your travel.
Just because grandparents raised their own kids doesn’t mean they’re in for extensive voluntary babysitting duty. (Heh-heh, duty)

i have a 4 year old and a 13 month old. we love traveling with our oldest daughter, but have left the infant home with grandparents twice.
if you think it will be a burden, than leaving him grandparents is an appropriate choice. he won't remember the trip, and i think it's important in a marriage/relationship to have some alone time.

Tailor the trip around the kids and the kids schedules. We usually wake up early and go, then get back to the hotel for nap or nap in a stroller. We rarely eat out nice meals and try to do an early dinner even at nice places.
Took two kids to Girl and a Goat in Chicago at like 5pm reservations and I think they were only kids in there but it was also pretty empty.
We usually get a “suite” or airBnb where we have a separate room from the kids. Mostly to not have to be quiet at night once they go to bed.
Plan less throughout the day. Traveling is slower, public transport is harder. We uber more short distances and stay closer to sites.
Outside of that have a blast. I love traveling with kids and opening their eyes to new stuff.

Just got back from a trip to Kauai with a 13 month old.
Went mostly well, but him being there we had to reschedule or change plans. Keeping him with grandparents isn't really an option for us as we live 10 hours away from the nearest. Flying to them doesn't work and we can't always fly them to us with their schedules.
We've traveled by air 4/5 separate times and probably at least 15 individual flights with him by now.
That age is when things actually get a little harder in my view. Before that was a breeze. He started walking and being more active before our trip, so flying is spending time keeping him occupied. We are pretty good at getting him to nap for takeoff so the first hour is usually him doing that. The flights actually went fine, it was car rides that went poorly at times, so expect the unexpected.
We just buy his seat instead of taking advantage of the lap child deal (at least he earns miles). After the nap he isn't in the seat but I'd rather have the whole seat row for their activity.
You have to be prepared for those changes.
We will probably take a little break between now and June as we have some individual travel during that time. We then head to Florida in June, probably family in October, then Japan in November around his second birthday (award trip in business class so not the same as being in economy).
Would recommend breaking up the flying if you can. We stopped in California each way on the Hawaii trip and will stop in Seattle one night on way to Japan.

Agree with first paragraph and the rest. We did the Girl and the Goat with him at that time as well. Very full for us though but he was happy with the cornbread.
I also have a hiking kid carrier and just picked up a lightweight "travel" stroller for our next adventures.

There are literally no pros to traveling with. Child that young. Congrats on being miserable.
