Pre 7-Night Greek Isles Cruise suggestions

Next July, wife, daughter (16) and I will be taking a 7 night Greek Isles Cruise on Odyssey of the Seas and I am starting to plan what we do over there before we sail.
Once we disembark we will probably spend one night in Rome so looking to add some time on the front end to just make it a two week trip. We plan to arrive in Rome on June 30, spend July 1 and 2 seeing a few things in Rome, the third will be an "open day" and then we board the ship on Saturday July 4.
So, I was thinking about leaving MSY on Saturday June 26 and spend a couple days before heading to Rome.
My three choices came down to Lisbon, Madrid or Dubrovnik Croatia with a strong lean towards Dubrovnik. We want something very walkable, love the idea of the coastline and walking the city walls, the Game of Thrones aspect is cool but not a MUST DO. Since we only have a few days and have never been to either of the three I was thinking Dubrovnik might be a better fit for a relaxing, scenic, food/drink heavy couple of days but open to thoughts, feedback or suggestions regarding any three or others I may not have prioritized.
June 26 is the earliest we are able to leave so there is no way to really extend it beyond that.

Dubrovnik is the clear winner for your goals. Not even close.
It gives you a relaxing, scenic, walkable warm-up before Rome and the cruise.
One important caveat: it will be extremely hot and crowded that time of year so the plan for it, but of course you’ll be in Greece so you’ll have the same experience.
I’m still trying to figure out the air travel on all of this and seeing how that might not stress you flying to different ports however that’s a different topic. Almost think you should consider Florence and then go by train down to Rome. Same issues for summertime travel with crowds, but it is one of the most amazing places in the world and I bet your daughter would love it.
I have a vote based upon my happy place: Slovenia! Ljubljana is a small, calm, and very walkable capital built around a pretty river lined with cafés and pedestrian streets. It has a relaxed, storybook feel — pastel buildings, a hilltop castle, and an easy pace that makes it one of Europe’s most charming low-stress cities. Easy day trip to Lake Bled or you could even possibly stay there night or two.

Was thinking of a Saturday (June 26) departure from MSY, arrival on June 27 in Dubrovnik. Then just an afternoon flight (they're around $100) from Dubrovnik to Rome on the 30th

Doesn't makes sense to go to any of those places for only 3 nights or so imo
I'd just spend your time in Rome, especially if you haven't been there before (and this is coming from someone that doesn't like Rome all that much)
Of those maybe I'd choose Dubrovnik, but I'd be surprised if flights from Lisbon and Madrid weren't better to Rome

People try to do too much imo, to ME this would be doing too much
I love Florence and like it way way way more than Rome

It's minimal. Dubrovnik is a little over $100, Lisbon is a little less, Madrid is the cheapest but it's not like Dubrovnik is $500.

Thats the thing...we don't want to spend it in Rome but the way the wife's vacation works, she has to take the entire week so it's either go somewhere else before we head to Rome or stay home. Daughter wants to spend a few days in NYC because she loves that place and I hate it.

RE: Florence. Maybe one of the single greatest tourist destinations you can visit in Europe.
Been 4 times in my life. Last time, we flew into Florence (FLR), spent a couple of days enjoying the city, then took the high-speed train to Rome.
We stopped in Orvieto years ago and it’s still one of the best hill towns on that route. It's worth the stop because it’s literally right on the Florence?Rome high-speed line and takes almost no effort to work in. You hop off the train, take the little funicular straight up into the old town, and suddenly you’re in this cliff-top medieval place with one of the best cathedrals in Italy, great views, and easy food/wine spots. It breaks up the ride, gives you a totally different vibe from Florence and Rome, and doesn’t add any real travel stress. We did it years ago and it still sticks with me as one of the simplest, most memorable stops on that route.
Surprisingly liked Rome compared to the time I was there years ago. So much to see and do.
Seems like this is the singularly easiest thing to do if you're looking at pre-cruise options (although you really need to go to Slovenia!!)

We took a cruise in April that embarked in Athens.
Onr three day pre cruise stay was in Hydra.
We loved it.
I will post more details when I get back from the Saints game.
You call it a Greek Island cruise but if it is Rome to Rome, I would just spend the three days in Rome.
You can't really do justice to Rome on a cruise because you are not there for that long and the port is a long way from the city.
