I am going to Houston for two days in early May (Thursday arrival and Saturday mid day return) really just to hit a Sun & Ski sports to have some work done on me and my wife's snow skis but she is going to tag along. We will be flying into Hobby and will have a rental so I don't really mind driving to another spot in the city for our stay.
I am looking for suggestions on places to look for a hotel that might be in convenient areas for dining, lounges / speakeasy's, maybe live music or a fund date or two, etc.
We like low key night life (not night clubs or bars) I am thinking like The Sugar Room an there is a band playing at The Last Concert on Friday night that I like so was thinking about something around the Houston Heights don't know much about that area except a quadruple shooting at The Lincoln Bar a month ago
Any other places to stay near a low key lounge with "easy access" to The :Last Concert near Downtown for a Friday night show or should I just stay Downtown?

Assuming you are going to the Westheimer Sun and Ski since its the biggest that I know of in the area. It isn't far from the Galleria area which has a bunch of hotels and food options and also sets you up within easy driving distance to most of the city.

I’d stay downtown. Better hotels than Galleria area and easier access to the other fun parts of the City.
For dinner/drinks, take your wife for drinks to Refuge (you’ll need reservations) and then grab dinner nearby at one of the following spots:
Uchi
Handies
Nobies
Graffiti Raw
Marmo
Doris Metropolitan
Another fun spot for date drinks would be the hotel bar at Hotel La Colombe D’or. I’d avoid Washington as it is mostly for 21-25 year olds.

Stay in the Heights. There is a courtyard Marriott there which is just fine for your stay. Plenty of restaurant, bars, dessert places walking distance. Right off I-10 so quick and easy for Last Concert Cafe..I’d Uber there instead of driving.

Hotel ZaZa. Unless you just want to stay downtown. Last Concert is a fun place! La Carafe and Dean's Downtown are cool bars. La Carafe is in what's supposed to be Houston's oldest building from 1845. Dean's is in a 130 year old former clothing store. Both are supposed to be haunted.
Oops, you said not bars. Dean's very much has a speakeasy vibe.
