After all of my flights, I still have never done a connection switching airlines (not talking about skyteam/oneworld alliance partners, but rather budget to popular airline) in an international destination
I did it this summer, and I wouldn't recommend it unless you get a fantastic deal. I flew Delta to Dublin round trip, then Aer Lingus to London from there round trip. HUGE PITA. Going was super easy and normal, coming back was a HUGE PITA. For one, for most international flights you have to check in at the desk because they check your passport. Huge airports that's a PITA because your regional terminal may be different than your international flight terminal, and you may not be able to do it at all until you are in the airport you fly out of. Saved me $400-500 per ticket so probably worth it. But I wouldn't do it for $100-200.
I would not recommend getting a connecting flight in Europe unless 100% necessary. Try to fly from the USA to your destination in Europe. We didn't get into London until about 1, by the time we got our rental car and got to our destination it was 3. So for one, it costs you almost a half day extra each way. Where as, a direct flight into London from the USA gets in around 9am like we got into Dublin at 8:30. But then had another flight at 11:30. Last thing you want is a connecting flight after a cross-ocean flight. Sucks

For some reason, I always convince myself that this is better than a 12-14hr flight. Then I get on that last leg and hate my life, maybe even more than on those 12-14hr ones. Have a split one like that coming up soon...

Last year around THanksgiving they had May/June tickets to various European cities for under 500 and some around 350

Yep. There was a pretty brief blast of great deals to much of Europe for very cheap, including flights from MSY.

We are looking to go around Easter 2018, flying from MSY to Florence, then home from Venice. Lodging booked but not airfare. I was hoping that the prices would go down but they have gone up in the last two months. The going rate for any flight we would book seems to be in the $1450.00 range.

It's all about booking windows and what people will pay. Most people looking to book right now for next spring or summer don't care about price as much as locking in their trip. The airlines aren't dumb, they know this or else their fares wouldn't be so high. As a consumer, you have to understand this.
There are always deals in the fall and winter for spring. It may not be a $600 deal but it will certainly get you well under $1450.

I got very lucky with setting an alert on Google Flights for an upcoming trip to Germany. Went from $1,300 to $450 for one day and booked it. The flight cost was only $100 and everything else was fees. This was with Delta out of New Orleans to Munich, with a return from Prague. So it was a multi-city booking. I have friends flying out of Austin and they have had no luck with any price drops in Google Flights.
Just read a news article that flights might drop on August 21-22, due to summer vacation travel slowing down. Can't always believe what you read in the news, but time will tell if anything goes down around this time.

If you book through European Destinations, you'll get their group discount pricing for flights. The caveat is that you have to also book at least one hotel through them as well.
We use them as a "starting point" for our vacation planning. If you string together a list of European cities, it will automatically recommend flights and inter-city transportation. We sometimes book through European Destinations or use the information acquired to book elsewhere.
Let me also say that the site looks really sketchy and the customer service can be a bit difficult (it's located overseas). But if you can live with that, you can't beat the airfare they offer. We've booked through them 3 or 4 times with no issues whatsoever.

Be careful with Alitalia. They are in the process of bankruptcy negotiations which may impact their long term operations.
I booked JFK to FCO on Delta for $1250 in October. I was inflexible on dates and time. The $1300 you mention is likely the highest rate possible.

Awardhacker.com will show you the best way to book with points. Sign up for the chase sapphire reserve or preffered, get the sign up bonus, and transfer points to appropriate airline will no doubt be the cheapest way.
