Go Daddy stopped POP and started using Outlook, which I don't care for. So I want to change. My website is an informational site about my business and is only a couple of pages.

POP and Outlook aren't exactly competing things, so explain what you like/don't like more please.
Do you really care about having email stored on your computer rather than the server? Do you want to use a specific email client rather than webmail?

If you're running a non-critical site, 1&1 (now IONOS.com) is cheap and we've had very few problems with virtually zero downtime over the past 15 years.
The last time I checked they support both POP3 and IMAP email clients.
However the 1&1 support reps give a Philippines boiler room vibe (with lots of courtesy to compensate for zero knowledge), and the company is constantly sending bogus "site scan" emails to get you to upgrade to useless add-on services.
We use a higher-cost webhost for our one domain that hosts an ecommerce system where tech support is more critical.

I use Rackspace for clients' email accounts (I dev websites).
Cheap... like $2-$2.50/mo per email account.
Very easy to set up and all you need to do is update your MX records wherever you manage your domain.

You should be able to use Thunderbird still. Just use the IMAP settings instead of POP3.
