I’m looking for a laptop that’s $500 or less

All I need it for is to respond to emails, surf the web, video chat, and maybe stream shows at times. Basically just regular computer stuff nothing fancy, any recommendations?

Chromebook, or walk in to Best Buy, point to one of the cheaper options, and go with that.

I've been rocking an ASUS chromebook since June 2017 & it's still kicking. I use it for the normal web surfing & streaming when I'm away from home. ASUS C202 I paid $196. Heck, there's a "Renewed" one on Amazon for under $80, right now.
Bought a ASUS Vivobook 15 F513 for my 14 year old for $550 at Christmas. He uses it for some music recording stuff, youtube, etc. It's been fine too.

Nice, it sounds like I can’t really go wrong with any of the cheap ones. Question for someone who knows what they are talking about, would 4GB memory and 64GB eMCC be enough or is it worth the extra $$$ to do 8/128?

Depends on how much extra money. But I would not purchase a computer with only 4GB of RAM at this point. Even for the usage case you're describing, 8GB is scraping the bottom of the barrel.

This.
4GB memory, even on a very lightweight OS like ChromeOS, will get chewed up very quickly.

Ended up going with the
HP 14" Laptop - 11th Gen Intel Core i3-1125G4 - 1080p Windows 11
Got it from Costco for $349 and paid for the 3 yr spill protection because I have a 3yr old kid and that’s exactly how my last laptop died. Paid $454 so under my budget, 8GB RAM 128GB storage

Should do anything you need it to
If you run into any crashing issues, it will likely be during video calls with too many browser tabs open, which could still exhaust your available memory. Just something to keep an eye out for.
