How good are ThinkPads?

They used to be well built, tough enough for corporate deployment. Sadly, these days they aren't substantially different from most other offerings.

It really, really depends on which product line. A lot of people get tricked into thinking that the "Featured Deals" that pop up front on every manufacturer's website are all that's available. There is much, much more out there. If you're the type that is eyeing a Costco deal or something, just check their return policy, buy it, and return it if you don't like it.
I've bought multiple ThinkPads/IdeaPads, etc from Lenovo. The ultrabook I use as a BYOD for work when I travel is super light, great screen, discrete graphics, etc. I bought it for under $1k five or six years ago, and it's still operating like a champ.

I looked at the 3 cheapest P series models. They'll be fine, although they're bulkier than I prefer. The second model that's on clearance has 32GB of RAM for under $1k! Stunning.

This is for my main workhorse computer. Rarely leaves the home. I need a 17 inch for what I do. I have a small MacBook and iPad pro for traveling.

I have a windows XP think pad that is a beast. I run autocad on it but upgraded to a new win 10 think pad a couple 3 years ago and it is slow. Not sure I would buy another one.

16 gb of ram more than plenty for me. My Asus g75 is six years old. Has 12 gb but starting to get dated

The $1.429 model. The difference was the chip. Ram can be expanded to 128 gb and the storage to 2TB

The older ones are built like tanks and are very relevant still in 2023. I have 2 P50 Thinkpads with 64gb of RAM that I use for video editing work YT stuff. Can't beat the value. They don't handle HEVC files well but bumping up to a P51 would easily solve that for nearly the same price. Their main drawback is that they are heavy.

That seems to be the most common complaint. They are only eight pounds. Yeesh

The power supply for it is another 8 pounds. Maybe a slight exaggeration but thats why I have a power supply by my bed, on my couch center console, and of course one at my desk at work.
