I’m looking for cameras that aren’t super sensitive and I don’t have to sign up with a service and can be accessed with an app.
Can be a combination of plug in or hardwired.

Dahua or Hikvision. Annke is probably the most common cheap, Hikvision rebrand that doesn’t mess with the original firmware too much.
These will use 100% universal protocols and use them to the fullest spec appropriate for the device. Zero brand lock in or any other dependencies.

Eufy. Love the solocams, excellent picture and range and completely wireless.

I have Reolink, Wyze, Arlo and EZVIZ cameras. I like my EZVIZ cameras the best out of those brands. EZVIZ is the more unknown company in the US but they sell more cameras, have more revenue and employees worldwide than these other 3 companies combined.
Ubiquity Unify cameras are the best by far but expensive.
For my purposes EZVIZ has a great feature rich app, it doesn't push it's cloud services (like Wyze) and some of the cameras you can install them as Ethernet or WiFi such as their C8W Pro camera. You can record continuously to a MicroSD card, so no subscription required. I can scroll through all 20 of my EZVIZ security cameras simultaneously live in the app on my phone, or I can view more of them simultaneously live easily by reducing their window size to smaller thumbnail sizes. I like scrolling through the daily event history of all of the combined cameras to see what critters visited my property. The C8W Pro camera has a lot of features that I really appreciate.
Their AI cameras are not sensitive to trees, leaves, etc., but like any camera, spiders can be an issue when they build webs right in front of the camera, or the camera's spotlight attracts a lot of flying insects.
If you use WiFi cameras like I do around the perimeter and away from the house, I definitely recommend you also set up a mesh network. Some of my WiFi cameras are 80' away from the house.

We had someone install Reolinks all over the place and I really like it. Runs pretty flawlessly and wasn't that expensive.
Before that, we had a patchwork of wireless wifi cams, and I liked Eufy the best. We still use some Eufy stuff, and honestly, their cams and sensors (I have them on some doors, gates, safes, etc. - are among the only smart home products I have very rarely had any issue with.
Eufy is more "it just works" than Apple IMO.*
*caveats that they're probably spying on you for CCP, etc.

Yup Amcrest is to Dahua as Annke is to Hikvision. Same equipment as the manufacturer and pretty much same firmware.
Frigate has been on fire this year dropping new features, adding control, and cleaning up the interface like crazy. I couldn’t imagine using anything else now. I just wish their Jetpack builds worked better.
We had a major incident happen the other day on our quiet cul-de-sac and we quickly found out exactly what was going when everyone else was just guessing.

I have them at the farm, the CCP is probably wondering when I'm going to dispatch that armadillo that keeps digging up the yard.
