Best way to rip and view large Blu-ray collection via a media controller

I was once tech savvy but the new media control stuff is leaving me behind. I need advice on how to accomplish or at least begin to solve what might be (or not) a simple task.
1. WHAT I WANT TO DO: I have a collection of 500+ 4K, Blu-ray and DVD movies and would like to be able to rip them to a hard drive of some sort and be able to play them on two TVs that are connected via CAT6 ethernet. My wifi devices do not need to be involved in this setup, but it would be a nice perk, I guess.
2. WHAT I HAVE: My high end PC (it has a blu-ray burner) is connected into a home network via Cat6 ethernet cables. My two Panasonic Plasma TVs, Oppo UDP-203 blu-ray player, Yamaha Aventage A-3050 receiver, Apple TV box, Roku Ultra Box and Netgear Nighthawk router are all hardwired. I have no devices that would really need to be wifi for the purpose of viewing my movie collection.
I read about NAS, Plex, etc. on this site but am not sure what each of these items do and what role they play. I assume I need a program to rip the discs, something to store the ripped movies on and something to distribute them to my TVs.
Can any of you savants help me or at least steer me to a good site or thread where I can learn what I need to know. Or, is there a service in Baton Rouge that can guide me through this setup.
By the way, I do not want to wind up with super compressed versions of my movies and would like to retain the high resolution and audio. If possible.
And I am prepared to pay for a robust system, I doubt there is a cheap way to do this and be satisfied.

Pick up a 14TB drive and I'll email you an iptorrents invite where your can select an uncompressed 4k rip of all your movies without the hassle of DIY. You can also get web-download rips that are professionally done and look great.
Its not illegal because you already own the movies.
Install Plex (it's free) and you're done. Your infrastructure is already top notch. You'll need to leave your pc on.
Any tv or device can play them locally or remote.

This isn't entirely true. I get the sentiment, you own it you can download it. But if you are torrenting you are seeding, no matter how little, and that is distribution. Insert the unauthorized distribution, reproduction yada yada FBI warning thingy.
Having said that, I am pro pirating and I don't think anyone will come kick your door in, but know that what you're doing isn't 100% legit just because you own the movie.

Most torrents are freeleech especially the highest quality links.
Just grab it and turn off the upload setting.
Your 4K REMUX rips will be between 50-75GB reach and will take around 30 minutes to download..maybe a little faster if you have a good internet service.
IMO this is the quickest way to turn your disks into high quality digital copies and Plex is a fantastic platform to view your content.
Bonus: you can put your home movies and music on there as well.
Just grab it and turn off the upload setting.

you're 90% of the way there. pick up a 14TB WD external drive and with your cat6 infrastructure and high end PC it will be a breeze to push that uncompressed 4K all over your house. 
my plex server is still running on a 2012 Alienware and it handles a dozen remote accounts (friends) @ 1080p and all my 4K HDR stuff runs great natively to all my devices around the house.
i am moving it soon to a very nice PC I just bought but i've been lazy and too caught up building retropie linux images at the moment.

Which 14TB do y’all recommend? There are several. Internal or external USB 3.0? WD, Seagate? Other specs to look for?
Iptorrents would get me to do the downloads. Right?
Then Plex would be the actual program to link to my devices?

14tb western digital. Do NOT get seagate. I bought one from best buy for $190 before Christmas but even at $200+ it's a great deal. You may need more eventually but start with that bad boy. It will hold all your current movies.
Plex is just like netflix but looks better and it's private. Very easy to set up and free unless you want some advanced features you don't need right now.
Ask questions here. Torrents are a little tricky initially but then you'll wonder how you got along without them.

I have Cox Gigablast but normally get about 300 download and 32 upload.

Just for the sake of discussion/information, if you wanted to actually rip the movies (or even just a subset) yourself, download makemkv, use that to rip the Blu rays to disk. You can technically leave them as they come from that program but they will be huge. You can get a program called handbrake to 'encode' the files which basically compresses them so they take up less space. You will potentially lose some quality so it takes a bit of tweaking and/or experience to figure out the best ratio of size to quality. Generally I go lower quality on kids stuff or movies where the visuals don't matter much.

This afternoon I downloaded MakeMKV and ripped The Kingdom in Blu-ray as a test and it took up 29GB. (I have two 2GB and one 4GB solid state external USB 3.0 drives.).
I could play the movie on a couple of programs on my PC well enough. But that is when I posted here to find out how to get them to play on my TVs in the den and master.
Tonight I downloaded Plex through my Apple TV box and it came up fine. But now I have to download Plex Media Center to my PC and figure out how to link it up. Will also buy a subscription for the better features.
That might set me up for now and until I buy a huge external drive.
Question, in order to save disc space, after I rip a Blu-ray with MKV, can I kill off some of those extras files without harming the main movie?

Also, do I understand correctly that if I go with iptorrent, I will not have to physically rip my movies? Just download a copy, so to speak? I really want the uncompressed version of the movies.
