I actually do wish taxes weren’t already relived from pay checks, but that monthly you had to write a check to the state, the feds, and possibly the local governing body if they have an income tax. You want to talk about people paying attention at that point?

While I agree with your point, the mechanics behind it are flawed. Almost a solid quarter of what you pay at the register right now are embedded corporate income taxes that are passed down the distribution chain until the consumer pays the full bill at the register.
Corporations do not pay income taxes, they collect them.
With the abolition of the IRS/repeal of the 16th Amendment, those embedded corporate income taxes totally go away from the cost of an item. Market forces will take care of that.
There might be some hesitation for Coke to drop their prices initially, because consumers are used to paying $4 for a 12-pack, but Pepsi's in the game too, and while Pepsi's pricing was the same, they know that those embedded taxes don't have to be a component of the retail price, so they drop theirs. The gross margin $ at $3 is no different than at $4 when they had to carry the income taxes in the price, so why not get every advantage they can?
When Pepsi's 12-pack is only $3, there's no way that Coke will stand for that, so they lower their prices, too.
Everyone makes just as much money in the process, and the consumer isn't paying anything more than they did before, except they're using funds from their whole paycheck, instead of what they're allowed to keep after Uncle Sam gets his mitts on the money first.
Remember: the concept of an income tax was so onerous to our Founding Fathers, that it took 150 years and a CONSTITUTIONAL AMENDMENT just to legalize it.

Imagine starting 1/1/20, everyone started getting 100% of their paycheck, but were required to then send a check for 15% of that to the fedgov, and 3% to the stategov, at the end of every month.
Plus, those "off the rolls" would still have to send a $50 check every month (skin in the game).

You'd have to reintroduce debtors' prisons, most likely.
It would make for a much more powerful leverage, however, for taxpayers to stop writing the checks to get the gov'ts attention.

If we're going to have income taxes, a flat tax is the only way it should be done.

That's a solid point. It might be the only component of the IRS that would be worth retaining and spinning off into a compliance arm, (assuming an old-school style of writing the gov't a check each quarter/year system).

I would rather an Amendment that swaps the income tax for a national sales tax and locks that rate in at 23%.
-Approximately 25% of a product's price is income tax so this could be a price cut for many products
-Everyone pays it. Period. With prices remaining the same there is no reason for anyone to be exempt.

The Fair Tax is the best plan.

We need to do away with income tax and have taxes on our purchases. That will eliminate paying people under the table and will collect taxes from everyone living in our country.
